Situated at the heart of Southall’s farm, The Jammery is where the seasons are preserved and shared. Part working kitchen, part culinary classroom, and part gathering space, it serves as the center of Southall’s preservation program, transforming fruits, vegetables, berries, honey, and herbs harvested from the farm into products enjoyed throughout the property.
From canning and pickling to fermenting, curing, and dehydration, The Jammery extends the life of the harvest while celebrating the flavors of each season. It is here that ingredients become stories, and meals become opportunities to better understand the land, the people who steward it, and the traditions that shape our foodways.

These practices help reduce waste, extend the harvest beyond the growing season, and create USDA shelf-stable products enjoyed throughout our restaurants, guest experiences, and Farmstand.
